Southern Living calls them Mini Caviar Parfaits but we improvised a bit. If you follow me on Twitter, you already know that I’m the queen of making do – including using the homemade icing from one of the cupcakes on the counter as coffee creamer!
My mom served these at the Oscar Viewing Party at Seven Gables and they were a HUGE hit. We swapped out the caviar for black beans and it was quite delicious to say the least. No luck for leftovers!

I hope everyone had a great weekend, regardless of the weather. This week is a short one for me – tomorrow is my Friday! Wednesday I’m heading to The Carolinas to spend the weekend with great friends to share laughter, love and lots of good food!

I love avocados, so this sounds delicious! You could probably even mix it up a little more with some cheese and serve them at a Mexican themed dinner party. Yum!

I completely understand the coffee incident! I used vanilla ice cream in my coffee when we were out of milk. It tasted like perfection!
