1. I armed myself with the new & improved PAM®!

2. PAM® Kickin’ Baked Rigatoni is my new favorite recipe to make with PAM®.

Ingredients:

PAM® Original No-Stick Cooking Spray

1 pkg (16 oz each) dry rigatoni pasta, uncooked

1 pound Italian pork sausage links, casings removed

1 medium onion, chopped

1 pkg (8 oz each) sliced fresh mushrooms

1 can (28 oz each) Hunt’s® Crushed Tomatoes

2 cans (10 oz each) Ro*Tel® Hot Diced Tomatoes with Habaneros, undrained

2 cups shredded part-skim mozzarella cheese, divided (2 cups = 8 oz)

Directions:

Preheat oven to 375°F.

Spray 13×9-inch baking dish with cooking spray.

Cook pasta according to package directions.

Meanwhile, cook sausage, onion and mushrooms in large nonstick skillet over medium-high heat until sausage is crumbled and no longer pink, stirring frequently; drain.

Add both crushed and undrained tomatoes to sausage mixture; mix well and bring to a boil.

Reduce heat to medium-low; cover and simmer 15 minutes, stirring occasionally.

Drain pasta; return to pan.

Add sausage mixture and 1 cup cheese; mix lightly.

Spoon into dish; top with remaining 1 cup cheese.

Cover with aluminum foil sprayed lightly with cooking spray, sprayed-side down.

Bake 20 minutes or until hot.

Cook’s Tip: Substitute Ro*Tel® Mild Diced Tomatoes & Green Chilies or Ro*Tel Original Tomatoes & Green Chilies for a milder flavored dish.

3. Prep for the Battle: I pull out all of my ingredients and tools before I start cooking. I place mine on my workspace in the order in which the recipes calls for it and also do any chopping or preparing of ingredients before hand.

4. Things Get Heated: Prep the oven by pre-heating to desired temperature for the recipe.

The recipe called for a nonstick pan, but I cook with stainless. I used a little PAM® in my skillet along with a little olive oil to sauté my onions, mushrooms and sausage.

I used diced tomatoes instead of crushed because I sent JH to the grocery store, and that’s what he came back with so that’s what we used! I’m not going to complain. And I used the Hot Ro-Tel®, and we loved the flavor, but we like HOT food!

The mix simmered for 15 minutes, and the noodles were drained and ready as well. It was time to mix everything together and put it in the oven!

5. The Moment of Truth: I pulled out my trusty spatula and easily dished out portions for all. It was a HUGE hit! And nothing stuck to the bottom of the pan!

6. The Champion Prevails: Thanks to PAM® I didn’t want to throw my Pyrex® pan in the garbage. Clean up was super easy! You can also spray your mixing bowls with PAM® to decrease soaking and scrapping. It’s not something you think about, but it works really well. I can’t tell you how many times I’ve wanted to dump my mixing bowls in the trashcan because I could not get them cleaned. ,

The new and improved PAM® formula really does work even better. I love the new can. The lid is much easier to remove while cooking, and the spray is more powerful, covering the area of the pan or bowl more effectively. I’ve always been a fan of PAM® but I’m even bigger fan of the new and improved PAM®!

Being a fan doesn’t mean you are a pro, it takes lots and lots of practice to learn all the tricks. He practices every night at dinner time and he’s getting better and better with each new day.

I discovered Tommee Tippee products while pregnant with Jack. I registered for a few packages of cups in stages from 6 months to 24 months. I actually started out with Tommee Tippee bottles too but quickly switched to Dr. Brown’s which is what we are still using and loving now.

But we love the Tomee Tippee cups and Jack also has a teething toy by Tommee Tippee that he loves too!

I can’t believe our little boy is already drinking out of a cup. The days go by so quickly. It wasn’t too long ago that a six month period of time would go by and not much would change. Now the amount of new things we get to experience in a short amount of time fills life with so much excitement, fun and more love than I ever imagined.

I just realized I got sentimental over a discussion about sippy cups. As my neighbor Darla would say, “you’re such a mom!”

Sausage Tarts (or Cups) – recipe from Kate, instructions from Samma. These are always a HUGE hit! And super easy too!

Mississippi Sin Dip from The Bell’s Best cookbook:

1 loaf Hawaiian bread
1 1/2 cups sour cream
2 cups grated cheddar
1 8 oz. cream cheese
1/3 cup chopped green onion
1/2 cup chopped ham
1/3 cup green chile peppers

Slice off top of bread and hollow loaf out (like hollowing out a pumpkin). Pour in mixture. Put top back on, wrap in foil. Bake at 350 for an hour. You will use the pieces you hollowed out as the bread for dipping. Once it comes out of oven, tear up the top of the loaf as well for dipping. *I buy an extra package of Hawaiian rolls to use for dipping, the inside of the bowl is never enough.

Joe and I attended our town’s 69th Annual Chamber dinner last night. We live in a wonderful little town, full of incredible people. Three special people are recognized at this dinner every year for three different distinguished awards. The best part of this is the recipients come to the dinner without knowing they are receiving an award so the people are always surprised. The moments are always touching. I always cry!

Before the blessing of the food, the pastor asked that we all stand to pray the Jewish prayer of the sick for our friend, Beth. For those of you that do not follow me on Twitter, we have a family friend that had a extremely serious accident two weeks ago. Beth suffered life endangering trauma to her head. She is fighting to recover and we all continue to pray and support her family during this time. It’s an amazing feeling when you are standing in a room of people of all different faiths and everyone puts their own aside to pray the prayer of the faith of a friend.

I’ve left out names and last names for privacy reasons.

May the One who blessed our ancestors — Patriarchs [...] — bless and heal the one who is ill: Elizabeth [...] daughter of [...]. We received this precious hat from some of our friends from up north. Dallas and I met in college at the Sigma Kappa house! How things have changed since those days? Ha! She so generously sent this thoughtful gift to Jack! And of course being a sucker for adorable gifts and sharing my finds with all of you, I had to post this immediately.

Look at this pillow! Let’s start with the less obvious points – 1. the fill of the pillow was not even a real pillow insert. 2. The material was of poor quality. And then to the screaming fuchsia arrows – 1. the pillow is falling apart and it’s still living on the shelves of the store. 2. The 66% off clearance tag is $30.60. Could you even get passed the $EIGHTY NINE NINETY NINE price? Me either!

I headed over to TJMaxx and although our store is what I consider poorly stocked. I found these two striped pillows for our couch for $16.99 each. You can see the difference for yourself. Night and day.

I threw this up here for a quick visual. I’m not so sure but I do love the pillows. The pillows may end up somewhere else in our house but I’m very pleased with the quality and price from TJMaxx!

I know what you are thinking, high rise jeans = grandma but I guarantee you your grandma is not wearing these 7 for All Mankind High Rise Bootcut! I ordered these from Zappos earlier this week. They arrived two days ago and I immediately fell in love. They are unbelievably slimming, just the right amount of stretch and you don’t have to worry about your Hanky Pankys sticking out because they are not the low-rise jeans your 16-year-old babysitter is wearing! Now what shoes to wear? I’m a huge fan of cognac colored shoes (shown in the pictures above) but high heels don’t exactly fit in my every day wardrobe anymore.

I Love Monkey book and monkey set is a wonderful gift for any child at pretty much any age! I love gifting things that deliver a wonderful message as well as something fun for the kids.

Who knew? I love my side swoop. Thanks to Vera’s Fashion Hauls like this one here on her finds from Banana Republic recently, I want to drive two hours to the closest Banana Republic. She landed some really cute things and they are all things I would wear! I love fashion and fashion trends but the beautiful trendy items cut low and skinny don’t really fit into my reality.

I’m sure it’s no surprise to you that I’ve found something else on Little Green Notebook that I like. This cabinet is very cool. Yes, I said “cool!” It’s old. I think the mirrors on the doors is funky and also functional. I love the green accents. And I like that it’s a piece that would look in different types of homes.
