by popular demand, the guac recipe

by Nina on October 30, 2008

The Guacamole Recipe! This recipe originated from the Barefoot Contessa Cookbook (I think the first one) by Ina Garten… well and then V put her touch on it. A little background – G&V (my parents) rarely follow a recipe, especially Chef G!! He MUST add a bit a this or that to make it his very own. They truly are two of the best cooks and let me tell you even when the words “well, not sure about this dinner… I just threw it together” are spoken… It’s always a H-I-T!

Key part to this recipe is the Avocado Scooper (from yesterday’s post)! This was a Jenna-discovery and everyone loves it once they have one!!

Recipe for: Guacamole
15 min 15 min prep
Serving: 3 cups
4 Rip Haas avocados
3 tablespoons lemon juice, freshly squeezed – 1 lemon
8 dashes Tabasco sauce
1/2 cup red onion, small dice
1 garlic clove, minced
1 teaspoon kosher salt
1 teaspoon black pepper, freshly ground
1 medium tomato, seeded and small dice
- Cut the avocados in half, remove the pits, and scoop the flesh out of their shells
(with your avocado scoop) into a large bowl.
- Immediately add the lemon juice, Tabasco, onion, garlic, salt, and pepper
and toss well. *V adds a few red pepper flakes and a bit more Tabasco than it calls for.
- Using a sharp knife, slice through the avocados in the bowl until they are finely diced.
- Add the tomatoes. Mix well and taste for salt and pepper.

I think quacomole is a meal in itself. It should be its own food group. Could eat it all of the time.
I love that recipe BTW, I like putting Louisiana Hot sauce in mine.
