Fish totally freak me out. Yes, I know it is beyond bizarre but fish and clowns - I’ve never been a fan of either. I have always been freaked out by clowns – and then I saw the movie “It” and that completely set in my fear of clowns for life. As for the fish, I’m not really sure when I started to not be a fan. My sis had a goldfish when we were little but there was no way I was letting a fish live in my room – even if it was just going to swim around in a glass tank. Last night, I put my fish fears aside and attempted to cook dinner. Every now and then I get a little itch to be all domestic so after I cleaned the house, I went to the grocery store with absolutely no idea of what to cook. Despite the fact that fish freak me out, I have zero problems eating fish so I decided baked salmon would be good for dinner. I’m super picky where my fish comes from so after leaving the grocery store, I went downtown to The Fish Market and picked up 2 pieces of salmon. Once I was back home, I spent a little time on Food Network.com, consulted my best friend L, poured myself a big glass of vino, and set off to cook. Baking fish was soooo easy. I really had no idea it would be this painless and so simple. I thought I’d share my super easy salmon recipe for all of you who are just as freaked about cooking fish.

Salmon Dinner for 2:
2 pieces salmon
extra virgin olive oil
lemon
salt
pepper
Cavender’s greek seasoning
-drizzle olive oil over the salmon.
-squeeze lemon over the salmon
-add salt, pepper, greek seasoning to the salmon
let marinate in the refigerator for 30 minutes or longer.
bake @ 420 for 10 minutes. (if fish is flaky, it is done!)
squeeze lemon over salmon & voila!
I served the salmon with roasted potatoes, sauteed spinach and a greek salad. The wine guy at the grocery store picked out a bottle of white wine that complemented the salmon perfectly. My newbie fish attempt was a huge hit! This is such an easy dinner that I’ll definitely be cooking again soon.

Great post, Leila! Wish I could add this to my recipe directory but J hates fish. Yep, that’s right *hates* fish. I’ll share my parm crusted chicken cutlets soon. We’ve gone domestic whether we like it or not!
I just started cooking salmon a few months ago. It is the easiest thing. I will have to try this recipe! I have a good one on my blog if you are interested, under the recipe label. It takes several ingredients to make the initial sauce, but the sauce lasts forever.

Teriyaki, ginger, honey salmon is my hubby’s fave… exact same steps as above, just substitute the three ingredients for Leila’s lemon, greek seasoning, and evoo. Delish!
