Easy Chicken Broccoli Rice Casserole

INGREDIENTS

3 Chicken breast, chopped into bite size pieces

I like more chicken, probably 4-5 chicken breasts. I also plan to eliminate the chicken all together and turn this into a side dish for a big family gathering or bring-a-dish party.

2 (10 ounce) boxes frozen chopped broccoli, thawed

2 cups cooked rice

Next time I make this I will use a little rice unless I'm making it as a side dish. As I side dish, I will probably add a little more broccoli.

8 ounces shredded Cheddar cheese

As a main dish, I used a little less cheese, but I'll probably use all the cheese when making it as a side. I might even use Velveeta if I'm unsure of all the guests dietary restrictions. I know a lot of people stick their nose up to Velveeta but it's a fantastic option for those that have dairy allergies.

2 (10 3/4 ounce) cans cream of chicken soup

1 small onion, chopped

2 T butter

I used a full 1/2 stick (4 T) of the Land O Lakes Olive Oil and Sea Salt stick butter to brown my chicken.

*I'd also have a carton of chicken stock on hand in case you think you need extra moisture.

INSTRUCTIONS
Cook chicken in butter in large skillet.
Add onions a couple of minutes before chicken is completely browned.
Add remaining ingredients and cook just until cheese is melted.
Put in 2 quart pre-greased casserole dish.

I cooked all my ingredients in my 5 1/2 quart French oven and then simply put the pan in the oven. Less dishes and there was no way I was going to fit it all into a 2 quart casserole dish.

Bake at 350 for 30 minutes.

Just as I was getting ready to plate the casserole along with some fresh sweet corn on the cob, I received this picture via text from my chef-mother... "This is what we're having for dinner. Butter poached lobster tail with leeks, pommes maxim and red beet essence." Isn't it gorgeous!? But seriously made me embarrassed to serve my not-so-pretty casserole to my husband. Here's the thing that's great about JH, he hates seafood so he much preferred my simple chicken broccoli and rice casserole. He had seconds and even said, "please put this in that binder of yours because you should definitely make it again."

I know Kiki plans to tell all of you about her very fancy lobster dish within the next couple of days so stay tuned.

    Although Kiki’s dinner looks lovely, yours wins in our house tonight! Can’t wait until it’s time for dinner!

    ETA – Oh my! This turned out amazing!! I subbed a can of chicken broth for one of the cream of chickens because that’s what we had on hand – it was the perfect consistency. Approved by all picky members of the household including the not so picky cat. =)
